نحيلة وهشة في الملمس ومتطورة وخفية في الذوق. إرثنا قرفة ألبا هي صنف نادر من القرفة الحقيقية التي تُصنع فقط باستخدام اللحاء الداخلي الصغير والعطاء من شجرة Cinnamomum Verum أو True Cinnamon.

The Sight

Kumara’s lush, evergreen true cinnamon farm sits atop a mountainous hamlet in Ratnapura District, undisturbed & pristine. Indigenous King Coconut trees (known as Thæmbili), giant anthills & papaya tree among others form part of the landscape. 

The Sound

The synchronised movements of skilled artisans scraping delicate cinnamon barks sound like a symphony. The outer bark is gently scraped, inner bark loosened and hand-peeled, then elegantly rolled into quills.

The Spice

Slender & brittle in texture, sophisticated & subtle in taste - Only young tender barks are harvested early morning by craftsmen & women using age-old traditions that have been passed on for generations. The quills are slow dried under the shade, naturally.

The Soil & Surrounds

The barks that have been peeled are used for firewood and the scrapings are used for mulching. Freshwater from the mountain gushes beneath the forest floor, a round the clock water resource for the cinnamon trees.

Oh so subtle!

This cinnamon is another level from the cinnamon I had before. It seems to be more tender and has a very subtle taste, and thus it is better used in recipes where you want to emphasize the cinnamon taste so that you can sense the complexity and subtlety of it. It's not just a spice!
