Home Baked Granola With True Cinnamon & Vanilla

 

Did they mention vanilla flavour in the ingredients? That must be all the chemicals! I don’t like almonds in my granola! What might be the source of honey? It might be overly sweet as always! Those cranberries look too stale! Cinnamon or Cassia? They’ll probably never mention! These endless questions, worries & long pauses browsing the granola/muesli aisles at the supermarkets ends right here. BAKE YOUR OWN GRANOLA! This crunchy & robustly flavoured mix of true cinnamon, vanilla, honey and coconut is guaranteed to make you a homemade granola convert.

 ~ Gather Your Ingredients ~

THE BASICS
2 cups Whole Rolled Oats
1/2 cup Coconut Oil
1/2 cup Honey
4 tsp Kandy ‘Heirloom’ Cinnamon [Add to cart]
1 tbsp Homemade Vanilla Bean Extract [Add to cart]
1/8 tsp (pinch) Salt
THE ADD-ONS
1 cup assortment of nuts & seeds of choice (Pistachios, Walnuts, Pumpkin seeds used in the recipe)
1/2 cup assortment of berries/dried fruits of choice (Dried cranberries, Medjool dates, Coconut flakes used in the recipe)
2 tbsp Cacao Nibs [Add to cart]

~ Preparation Instructions ~

1. Mix all the basic ingredients together in a bowl and stir well to combine until the coconut oil and honey are well coated with the oats & spices. Add the nuts and seeds and combine well.

2. Line a baking tray with parchment paper. Spread the granola evenly, neither too thinly spread, for it might burn, nor too thick. Bake for about 20-25 mins in a preheated oven in 160°C. Stir the granola in between so it gets baked evenly. If you want the granola to be clumpy & chunky, do not mix and instead press down with a spatula to make them stick.

3. Let it cool. The granola gets crispier further as it cools. Then add the dried cranberries, medjool dates and coconut flakes. If you would like to further add any already roasted nuts, this is the time. Mix them well.

4. Once completely cooled down, store the granola in an airtight jar.

This ‘a-one-bowl-affair’ recipe is worth the extra minutes you’d have to spend every week or so. You get to choose your own quality ingredients and customise as per your taste & preferences.
