“The way we cook here shows you how flexible this vanilla is, everyday meals can be something extraordinary,” Réunionnais hip-hop artist Maya Kamaty explained to me, describing this local slow-braised duck dish, where the subtle sweetness of vanilla matches the warmth of turmeric and ginger. Réunion Island is a lush, volcanic speck in the vast Indian Ocean, synonymous with vanillin-rich high-quality Bourbon vanilla, named after the island’s former name, Île Bourbon. This variety, Vanilla planifolia, develops notes of pear, cocoa, and caramel during its curing process. Bourbon vanilla is the leading variety produced in the Indian Ocean islands.
