- Wash, peel, and halve the pears.
- In a large saucepan or pot, combine the water, brown sugar, spices, and orange peel. Bring it to a simmer until the sugar is dissolved.
- Add the pears and make sure they are submerged in the liquid. Allow them to cook for about 15–20 minutes until slightly soft but not mushy.
- Remove the pears and set aside on a plate. Let them cool while you continue to simmer the liquid in the pan.
- Add the orange juice and simmer over medium to high heat until the liquid reduces to a syrup-like consistency.
- Once done, remove the vanilla pod and broken cinnamon stick from the syrup.
- Spoon the syrup over the pears and enjoy alongside a scoop of vanilla ice cream or over Crème anglaise.
