We take Agua Frescas as seriously as cocktails. Although *Agua* (meaning water in Spanish) *Fresca* (meaning fresh) are thirst quenchers meant to be sipped on a sultry day, we love to add a shot of vanilla bean–infused simple syrup to subtly flavour the drink that is otherwise very light bodied with the cucumber.

- To make the simple syrup, add equal parts water and sugar to a saucepan and simmer over medium heat. Slit the vanilla bean lengthwise and add it to the syrup. Stir until the sugar dissolves. Let it cool and infuse for a few hours. Strain and store in the refrigerator.
- Blend chopped cucumbers (unpeeled), fresh lime juice, mint leaves, a shot of vanilla syrup, pinch of salt, and water to your liking. Blend on high speed until smooth.
- Serve chilled in a glass, garnished with mint leaves and lime wedges.
